The results of studies of the processes of cement hydration and hardening with the help of a new design of differential micro-calorimeter, which makes it possible to record with high accuracy the change in the differential temperature difference in time between dry (standard) and wetted (sample) cements, are presented. The temperature of the system is an important thermodynamic factor, by the change in which the nature of the running processes can be judged. It is shown that the processes of hydration and hardening are accompanied by the emergence of several induction periods in which the recrystallization of the primary colloidal hydration products occurs. A necessary condition for the spontaneous formation of the structure of cement stone is the achievement, during the induction periods, of the percolation threshold, at which for further processes in the cement-water system should be a change in the geometric shape of the particles from a round, in the colloidal state, to the crystal, accompanied by a decrease in the volume of the solid phase and the appearance of free water, which interacts with the non-hydrated part of the cement grains. Due to this, the interaction of cement with water occurs at regular intervals and accompanied by acoustic vibrations, which confirms the ongoing of the dispersion process of cement particles.
